• Basque cuisine is cheerful and colorful, all red as if rubbed with Espelette pepper. Here, we hunt woodpigeon, we fish for Adour salmon, river trout, tuna, sardines and chipirons in Saint-Jean-de-Luz. The meal is taken with a full-bodied wine from Irouléguy and ends with a glass of Izarra, after the essential sheep's cheeses served dry or fresh with morello cherry jam and of course the Basque cake!
